Fall 2014 Single Hop Experiment

This fall, we invite all our members to participate in our Single Hop Experiment! It's a great way to learn about the dozens of new hop varieties which have recently come on the market.

Each participant will brew a beer with a simple, standardized recipe. The beer will be an American Pale Ale with a light malt base to allow the hop flavors and aromas to shine through. Each brewer will choose one hop variety, and will use that hop for bittering, flavor, and aroma, including dry hopping. No two brewers will use the same hop.

You will need to brew your beer in October or early November. We will taste all the beers at the UKG technical meeting, 7:30pm on Thursday, Dec 11 at John's Buffet, 27W482 Jewell Rd in Winfield; map here. All club members are invited to the technical meeting to taste the beers. Brewers should bring six 12 oz bottles or a 1/2 liter PET bottle of their beer to the meeting so there will be an opportunity for everyone to taste.

Malt for all-grain version:
90% (approx 9 lb) US/N American 2-row pale malt
5% (approx 0.5 lb) wheat malt
5% (approx 0.5 lb) 40L caramel/crystal malt

The exact amount of malt needed will vary depending on the efficiency of your system. Use a single infusion mash at about 152°F.

Malt for extract version:
5 lb Pilsen light dried malt extract (2 Lovibond)
0.5 lb US/N American 2-row pale malt
0.5 lb wheat malt
0.5 lb 40L caramel/crystal malt

Steep the grains at 150°F for 30 min, then drain them and remove before adding the DME and heating to boil.

Hop additions:
60 min: adjust to get 18 IBU
30 min: adjust to get 14 IBU
5 min: 1 oz (will give about 3 IBU)
dry hop: 1 oz for 7 days at end of fermentation

You will need to calculate the amounts of the first two additions based on the alpha acid content of the hops you choose.

Yeast:
Safale US-05, White Labs WLP001, or Wyeast 1056: American/Chico ale yeast
Water:
If you have Lake Michigan water, use that with no mineral additions. If not, just make whatever adjustments you need to approximate the Lake Michigan water profile.
Fermentation:
Ferment at 66-68F. Rack and dry hop in the secondary. Prime with about 3/4 cup of corn sugar, or 2.5 volumes if force carbonating.
